Gluten-free foods: Fad or medical necessity for some?Posted: Updated:
PHOENIX -- If you've been grocery shopping lately, chances are you've seen more and more products touting themselves as gluten-free.
Registered dietitian and fitness pro Tiffani Bachus explained what gluten is and why people diagnosed with celiac disease cannot have it.
Celiac disease is an autoimmune disorder of the small intestine that is exacerbated by the ingestion of gluten, a protein found in wheat, barley, rye and the like. It's also used as a food additive or thickening agent.
Bachus also explained the significant differences between celiac disease and gluten sensitivity or intolerance.
