Wingless Buffalo Chicken Pizza

PHOENIX -- Now more than ever, people are trying to get the most bang of their hard-earned buck.

Registered dietitian Maya Nahra came up with a fabulous (and healthful) meal that's perfect for a family of four and here's the best part -- it costs less than $10!

Cost for 4: $9.81
Cost per serving: $2.45

3/4 lb. chicken breast cutlets (~$2.89)
1 Tbsp. extra-virgin olive oil (~$0.25)
2 tsp. grill seasoning (~$0.05)
1 whole grain pizza dough (~$2.99)
Whole grain flour (to handle dough) (~$0.05)
2 Tbsp. butter (~$0.25)
1 Tbsp. Worcestershire sauce (~$0.05)
2 to 3 Tbsp. hot sauce, medium to spicy heat (~$0.05)
1/2 cup tomato sauce (~$0.10)
1 cup shredded Monterey Jack cheese, a few generous handfuls (~$1.99)
1/2 cup blue cheese crumbles (~$0.99)
3 scallions, thinly sliced (~$0.15)

Preheat oven to 425 degrees F. Preheat grill pan (or sauté pan) high. Place chicken on a plate and drizzle olive oil over the chicken and sprinkle with grill seasoning. When grill is hot, add chicken and cook about 3 minutes on each side.

Stretch dough to form pizza using flour and a rolling pin to help you handle it. If you let it rest and warm up a few minutes it will handle even easier. Set pizza on pizza pan to the side and clean board.

In a medium skillet over medium heat, melt butter and stir in Worcestershire, hot sauce, and tomato sauce.

Remove the chicken from grill and thinly slice it. Add chicken to sauce and coat. Cover the pizza dough with the saucy Buffalo chicken, cheeses, and scallions.

Bake 18 minutes or until crisp.
