Tomatokeftedes (Pseftokeftedes)

Serves 4-6

1+1/2 cups Finely chopped tomatoes(Half fresh half dried/marinated)
1/2 cup Chopped scallion
1 tblspn Parsley (chopped)
2 tblspn Fresh Mint (chopped)
pinch Oregano
1.5 Oz Water
2 tspn sugar
1 cup Flour(Gluten free)
1 tspn Baking Powder

Combine all of the ingredients.
Spoon into balls and deep fry until golden.
Serve with a fava bean puree. This is simply 8 oz of blanched and peeled fava beans that have been pureed with mint a little water and olive oil.
Season to taste.
