Tyler Cooks in the 2012 Walk On! Kids Cooking Challenge

Tyler’s ‘Tizers

2 cups mashed sweet potato
1 cup of finely chopped carrots
1 cup of finely chopped spinach
1 cup of finely chopped celery
1 cup of finely chopped sweet onion
1 cup of finely chopped bean sprout
1 egg
4 9-­grain mini buns
Lettuce leaves, washed and dried Tomatoes, sliced

Special Sauce
1/4 cup of relish
1/2 cup of low-­-fat mayonnaise
1/4 cup of sugar-free ketchup

Combine mashed sweet potatoes and chopped veggies in a large bowl. Wisk the egg in a small bowl and then combine it with the veggies, stirring together. Combine mixture into 4 small patties. Cook burgers under broiler (or grill) until cooked to desired wellness. While burgers are cooking, combine relish, mayo, and ketchup until fully mixed. Lightly toast buns, place one burger on each bun and top with lettuce, tomatoes and special sauce. Add other condiments as desired. Serve two mini burgers per plate. Makes 2 servings.
