"S-Mac Down" and Cheese

2T unsalted butter
2T all purpose flour
1 1/2 cup whole milk
1/2 cup smoked Gouda, finely shredded
1/4 cup Parmesan-pecorino Romano blend, finely grated
Kosher salt to taste
Chipotle Tabasco to taste
Smoked paprika to taste
1/2 box or 8 oz. elbow macaroni, dry

Bring a pot of salted water to a boil.  Add macaroni and cook until al dente, 8 to 11 minutes.  Drain and keep warm.

In a saucepan, melt butter over medium heat.  When completely melted, add flour and whisk to incorporate, creating a roux. 

Add milk to roux and whisk until smooth.  Bring to a simmer and allow to thicken lightly, about 4 minutes.

Add both cheeses and whisk until smooth.  Taste and adjust seasonings with salt, paprika and Tabasco.

Add macaroni to pot and coat completely, or place macaroni in a bowl and toss with cheese sauce.  Serve immediately.
