Bryans Black Mountain Barbeque

Shrimp Evelyn
Serves 6-8
1 tablespoon olive oil
4 tablespoons butter
1 cup diced red onion
1 cup diced celery
1 cup diced red bell pepper
4 cloves garlic, peeled and chopped
8 tablespoons Bryan's BBQ Spice Rub
1 bottle, 12 ounces, beer
2 pounds shrimp, shell on and veins removed
5 tomatoes, chopped
Juice of 2 lemons
Loaf of crusty bread

Heat large, deep skillet on medium heat. Add olive oil and butter.  When hot, add onion, celery and bell pepper. Sauté about 5-7 minutes, or until the vegetables are soft. Add beer, garlic and Bryan’s Spice Rub to pan.  Simmer until liquid is reduced in half.   Add shrimp and cook until shells turn pink, about 3-5 minutes. Top with tomatoes and finish with lemon juice. Serve with crusty loaf.

*To devein run knife through shell on back, rinse vein – shell remains.
Can be a family style dish and served over rice.

Brisket Burnt End Grilled Cheese Sandwich
2 slices white bread
1 oz butter
 4 oz brisket burnt ends
4 slices white cheddar cheese
1 oz grilled onions
1 oz Bryan’s BBQ Sauce

Grill bread with butter in large sauté pan. Top bread with cheese and then brisket and onions. When cheese is melted add Bryan’s BBQ Sauce and press two sides of sandwich together.

Firebird Wings   Serves 4-6
1 dozen drumettes, approx 2 lbs
1 0z Bryan’s Spice Rub
4 oz Bryan’s BBQ Sauce
4 oz Firebird Glaze
3 Scallions, chopped

Season drumettes with Bryan’s Spice Rub, place in smoker for approximately 2 hours,  or until internal temperature reaches 165°. Combine 4 oz of  Bryan’s Sauce  and 4 oz of Firebird Glaze in a large sauté pan, let simmer until mixture thickens.  Add hot wings from smoker to coat.  Top with chopped scallions.

32 oz Ketchup
32 oz tomato sauce
12 oz cider vinegar
2 oz honey
1/2 cup brown sugar
12 oz beer
1 T crushed red pepper
2 T chili powder
1 tsp granulated garlic
1 tsp coarse black pepper
2 T lemon Juice
2 ea bay leaves

Combine all ingredients in saucepan. Simmer for approx 20 minutes or until sauce thickens. Remove bay leaves

6 tbsp salt
6 tbsp chili powder
4 tbsp paprika
2 tbsp course black pepper
2 tbsp sugar
1 tsp dry thyme
1 tsp ground celery seed
1 tbsp granulated garlic
2 tsp dry oregano
4 tsp allspice

Combine all ingredients.
