Mediterranean Quesadilla

1# beef tenderloin (cut in stripes)
1 Onion (sliced)
1 red pepper (sliced)
2 Tbls. Chopped cilantro
1 tsp. cumin
1 tbls. Olive oil
1 tsp. chopped garlic
Salt and pepper to taste

Procedure
1. Heat oil in a pan and sauté onions, garlic and peppers for 2 minutes.
2. Add beef, cumin, salt, pepper and cilantro and sauté for 3 minutes.
3. Place meat mixture in between pita bread and press together.


Harissa Sour cream

7.5 ounces-Pimentos, chopped
3-Mint Leaves, chopped
1-Garlic clove-chopped
½-Shallott-chopped
½ -Tablespoon Olive Oil
½-Tablespoon Dry Mustard
¼ -Teaspoon  EACH- Crushed Red Pepper; Cayenne Pepper; Coriander; Ground Fennel & Black Pepper
1-Teaspoon Salt
1 cup of sour cream


Procedure:

Combine all ingredients in a quisinart and blend until smooth.
Keep in an airtight container in the refrigerator
