Apple Butter Crepes

apples ¼’d and cored
apple Cider
white wine

This recipe with use two deep sauce pots, a strainer, a bowl, a spatula, and a blender/robot coupe/food processor

Place ¼’d apples in a pot and cover with apple cider by at least 3 inches.  Bring ingredients to a slow gentle simmer.  Cook until cider has reduced to just cover apples. 

While apples are cooking place trim (scrap from cores, seeds and all) in separate pot and cover with white wine.  reduced to a glaze, don’t walk away during the final moments! once a loose glaze has formed cover with apple cider and boil it like crazy for 10 minutes.  Scraps should remain loose in the liquid.  When mixture is completely broken up push through a strainer into a bowl with the rubber spatula.  Discard debris and add this to the clean apples.

Puree mixture and place in a crock pot.  cook on low stirring every so often until it tastes to your liking.

1 cup flour
3 Tbsp.  melted butter
2 ea. eggs
¾ c milk
½ ea. apple cider

Place in blender and blend for 20-30 seconds. chill for at least an hour. use a small nonstick pan and a 1 oz ladle and place
