One Potato, Two Potato, Three Potato-POW!

2-cups parsnips-chunky
2-sweet potatoes-chunky
8-yukon gold potatoes-chunky
2-Idaho russet –cut into match stick size
1-medium yellow onion-diced
8-gloves garlic
2-Tbsp. olive oil
2-Tbsp. butter
2-Tbsp. fresh parsley-chopped
1-Tsp. poultry seasoning

After cutting the russet potatoes into match stick size, fry until crispy brown, set aside, this will be used later in the final step.
In a large sauté pan, heat olive oil, add onions & garlic, sauté for 3 – 4 minutes, add parsnips, sweet potatoes, & Yukon gold potatoes continue to sauté until golden brown, approximately 10 minutes, remove sauté pan and transfer items to a baking sheet.  In a pre heated 350 degree oven, bake for 30 minutes, or until the potatoes are soft, transfer baked items to your serving bowl and toss with the following items, butter, fresh parsley & poultry seasoning.  Garnish with match stick russets.
