Shrimp Burger

For The Burger
2# P&D shrimp chopped
1 rasher bacon (optional)
1 clove garlic
I fingernail size of ginger
1 Tbsp. chopped cilantro
1 Tbsp. chopped parsley
1 stick celery
2 scallions chopped
1/2red bell pepper chopped
1 lemon zest and juice
1 egg
3 Tbsp. mayo
1 cup breadcrumbs
1 Tbsp. old bay seasoning
S & P
 
For The Fixing’s
1 shallot
½ clove garlic –chopped
½ tsp. curry powder
4 Tbsp. mayo
romaine lettuce leaves
6 grilled scallions
1 mango sliced & grilled
1 heirloom tomato
6 slices peeled cucumber

Method:

Burger:
Finely chop the shrimp, celery, pepper, bacon and ginger. In a bowl mix all of  the ingredients. Form into six burger patties. Grill over a medium heat for about 5 minutes a side. Take off the heat and rest for 5 minutes.

Fixing’s:
Finely chop the shallot and garlic. Sauté in a little oil. Add the curry powder and cook out. Cool down and add the mayo .Grill the scallions and mango.

Assembly:
Spread the curry aioli on a bun. Place the burger on top. Then place the cucumber, sliced tomato, grilled scallions, grilled mango and lettuce on the burger. Place the top on the burger and tuck in. YUMMY!!!!!!!
