Tomato Essence Pan Seared Salmon

4-6 ounces salmon
2-Tbsp. Mo’ Rockin Spice
1-Tbsp. olive oil
½ cup each -brown, white & maitake beech mushrooms
1-cup roma tomato-chopped
3-gloves garlic-chopped
2-shallot heads-chopped
1-Tbsp. butter
2-cups tomato juice
1-Tbsp. tomato paste
1-lb. angel hair pasta-cooked
salt & pepper to taste

Heat skillet with 1 tablespoon of olive oil, sear salmon, on one side only for approximately 3 minutes.  Remove salmon from pan and place on baking sheet, bake at 400 degrees for another 5 minutes.  Return to skillet and add butter, roma tomatoes, garlic, & shallots, sauté for approximately 5 minutes.  Add tomato juice, mushrooms and  tomato paste, reduce to half the amount. Take sauce and toss with pasta, remove salmon from oven and place on top.
