Green Harissa & Za'atar Spice

Ingredients:
½ cup spinach leaves (packed!)
¼ cup parsley leaves (packed!)
¼ cup cilantro leaves (packed!)
1 tsp. smoked paprika
¼ tsp. ground cumin
1/8 tsp. ground cardamom
1 ½ tsp. ground coriander
2 ea. jalapenos (small, seeded & coarsely chopped)
2 ea. garlic cloves
½ tsp. lemon zest
½ tsp. orange zest
1 Tbsp. fresh orange juice
2 Tbsp. fresh lemon juice
6 Tbsp. canola oil
Kosher salt
Fresh cracked black pepper

Method:
In a blender, pulse all ingredients except for the oil, salt and pepper until the greens are finely chopped.  With the machine turned on fully, add the oil and puree.  Season with the salt and pepper.

Za’atar Spice Mix

Ingredients:
¼ cup  sumac
2 Tbsp. dried Thyme
1 Tbsp. toasted sesame seeds
2 Tbsp. dried Marjoram
2 Tbsp.  dried oregano
1 Tbsp.  kosher salt

Method:
Grind sesame seeds in food processor.  Be careful not to over grind… they should be coarsely ground.  Add remaining ingredients and mix well.
