Healthful game-day eats - 'Tedy Bruschi' Breast

PHOENIX -- It's Monday, which means it's time for Monday Night Football! Before you grab the usual pizza and chips that are the hallmarks of many a Monday Night Football party, you might want to consider some options that are a bit better for you -- healthful finger food.

Ingredients
6 chicken breasts (boneless, skinless)
Salt, to taste
Pepper,  to taste
2 cups buffalo or wings sauce (Alice Cooper'stown uses Frank's Red Hot Sauce)
1 can diced green chilies
Sour cream
Shredded cabbage
Flour tortillas (soft taco size)
Romaine lettuce
Shredded cheese

Ingredients
Grill chickens breasts and chop into strips.

Sauté chicken in your sauce of choice. Make sure to coat the chicken well so it absorbs the flavor. You want to cook the sauce into the chicken.

Add green chilies and continue to simmer. You can use whole roasted green chilies if you like. Just cut them into strips and add as desired.

Using a flour tortilla or a romaine leaf, build your taco with spiced chicken and chilies, shredded cabbage, cheese and sour cream.
