Summer Salad of Peaches, Watermelon, Herbs & Goat CheesePosted: Updated:
~ Four Servings ~
3 fresh peaches, sliced into 6th’s (do not peel)
3 oven dried peaches, cut into julienne *
5 ounces goat cheese
12 melon-ball scoops of watermelon
4 handfuls of field green lettuces
1/3 cup vinegar: Muscat, or Champagne with a tsp of organic sugar
2/3 cup olive oil
1. Mix all ingredients for salad in a large bowl.
2. Separately mix dressing ingredients and toss in increments with salad until it is just lightly coated.
3. Season to taste with salt and freshly cracked black pepper
*To oven-dry peaches, slice and place in a 2000 oven for 2 hours
