Orange Sesame Chicken Bento Box

4 ea. chicken breasts, about 4oz. each, pulled or sliced
½ ea. carrot, shredded
1 ea. celery stalk, sliced thin on the bias
½ ea. red bell pepper, cut julienne
4 ea. ccallions, sliced thin on the bias
2 Tbsp. cilantro, chopped
To taste   Kosher salt and freshly ground black pepper
As needed Orange Sesame Dressing (recipe follows)

1. Combine all ingredients in a large mixing bowl. Toss with just enough Orange Dressing to coat. Serve with tender salad greens, vinegared cucumbers and jasmine rice.

Orange Sesame Dressing

2 ea. oranges, juice (will yield about 1 cup) and zest
1 tsp black sesame seeds
¼ tsp Togorashi
2 Tbsp rice wine vinegar
2 Tbsp salad oil
¼ tsp sesame oil
To taste  Kosher salt and freshly ground black pepper

1. In a small saucepan over medium high heat, reduce the orange juice by half (to ½ cup); cool. Transfer to a mixing bowl and whisk in sesame seeds, togorashi, vinegar, salad oil and sesame oil. Add about a teaspoon of the orange zest.

Steamed Jasmine Rice

3/4 cup Jasmine Rice (Mahatma Brand; does not require washing)
1-1/4 cups  water

1. Place rice in a rice cooker with the water and use normal cycle, or bring to a boil on the stovetop, lower heat, and simmer approx. 20 min. until tender.
