Vegan Sweet Corn Pudding

2qts sweet corn kernals, fresh only
2c sweet corn kernals,
2ea Shallots, minced
1ea serrano, minced
2T Red wine Vinegar
6T Olive oil, not blended!!!

Puree or juice 1/2 of the Kernels into a bowl over ice.  Keep Cold.  Marinate relish to desired taste and texture.  at least 1 hr.   Sautee remaining kernels with some chopped some onion, garlic, peppers until golden brown or just saute briefly for added texture.  Add juice and constantly stir until desired thickness.  Serve with a spoon!!

Melons were just scooped and tossed with lime and orange juice. garnish with salt, chili flake, zest etc.
