•6 tbsp Coconut Oil •¼ cup Maple Syrup •¼ tsp Salt •1 cup Sweet Potato, Boiled and Mashed •1 tbsp Chia Seed, Ground •¼ cp Applesauce, Housemade and Unsweetened •1 Vanilla Bean, Split and Scraped •1 ½ cp "Nourish No-Grain Flour" (or other preferred flour mix) •1 tsp Baking Soda •1 tsp Baking Powder, GF •½ tsp cinnamon •½ cp Dried Figs, chopped •½ cp Dried Cherries, chopped •¾ cp Water In a mixer bowl add the oil, syrup, salt and sweet potato. Mix on medium for 2 minutes. Scrape down the bowl and add the chia, applesauce and vanilla bean. Mix on medium for 2 minutes. Scrape down the bowl. Add the flour, soda, cinnamon and powder. Start on low until moistened. Increase to medium and let mix for 1 minute. Scrape down bowl add the fruit and the water. Mix on medium until combined. Use either paper cups or oil the muffin tray. Fill to top with dough and let bake at 350F for 10 minutes or until a toothpick inserted in the center comes out clean.
