RECIPE: Arugula & Melon Salad

Serves 4


1 lb. arugula      
1 cup  watermelon diced  
1 cup  canteloupe  diced  
1/4 cup  pumpkin seeds toasted  
1/4 cup  cherry tomatoes sliced in half  
10 leaves mint picked  
3 pieces breakfast radish shaved  

For Salad:     
Place the arugula, pumpkin seeds, shaved radishes and mint in a mixing bowl     
Add the dressing till lightly coated but not overly dressed     
Place the mixture in the center of a cold plate **     
Place the diced melons and tomatoes around the arugula in a decorative manor      
Drizzle a little more dressing over the melons     

2 cups watermelon pureed  
1 t honey honey  
1/2  lemon juiced  
Pureed watermelon in blender     
Add the honey and the lemon juice     
Can be made one day ahead and kept in the refrigerator
