Pan Seared Cape Cod

4-5 oz True Cod
2-Tablespoons Olive Oil
2-Teaspoons Granulated Garlic
1-Tablespoon Sumac
2-Cloves Garlic-Chopped
8-Mexican White Shrimp-Diced
1/8 Cup-White Wine
1/8 Cup-Stock
2-Cups Tomato-Diced
2-Tablespoons White Balsamic
Salt & Pepper to Taste

First rub cod with olive oil, then mix the remaining ingredients to create a dry rub.  Pre-heat skillet & 1 Tablespoon of Olive Oil, until hot, add Cod and cook until brown approximately 3- 4 minutes.  Turn Cod over and add the remaining items EXCEPT White Balsamic
Cook for an additional 3-4 minutes, approximately one minute before removing from pan add White Balsamic

Panzanella Salad

8-oz Raw Spinach
1-Cup Grilled French Bread-Cubed
1- Red Onion Sliced
½ Cup- Sun Dried Cranberries
1-Tablespoon Olive Oil
Salt & Pepper to Taste

Toss together above items and serve
