Red Chili Honey Pisto Grilled Chicken

4-Boneless/Skinless Chicken Breasts
2-Tablespoons Olive Oil
2-Cloves Garlic-Chopped
Salt & Pepper

Combine last three ingredients, and coat Chicken Breasts
Pan Sear Chicken on both sides, starting with a very hot skillet.

Honey Spiced Chicken Sauce

1-Tablespoon + 3 Teaspoons Crushed Red Pepper
2-Tablespoons Brown Sugar
2-Tablespoons Fresh Garlic
3-Ounces Red Onion
1-Ounce Fresh Mint
2.5 –Ounces Cilantro
6-Ounces Dijon Mustard
2-Tablespoons Salt
1-Tablespoon Pepper
4-Tablespoons Lime Juice
8-Ounces Honey
2-Cups Olive Oil

Combine all ingredients, except oil in food processor and blend.  Slowly add and emulsify oil
Once chicken breasts have been pan seared, paint both sides of breast with sauce, place in a 350 degree oven and bake for 15 minutes.

Peach Bisque

8-Medium Size Peaches Peeled & Pitted
2-Tablespoons Fresh Mint
2-Green Onions Chopped
2-Tablespoons Brown Sugar
¼ - Cup Peach Schnapps
2-Teaspoons Chinese Five Spice
1-Tabelspoons Pickled Ginger
2-Cups Orange Juice
Salt & Pepper

Combine all ingredients in food processor and blend.  Allow bisque to chill for at least 2 hours prior to serving.  Serve in chilled bowl.
