Roasted Pork Loin with Orange Serrano Chili Onion Glaze

Pork Loin Rub

2-Tablespoon Olive Oil
2-Tablespoons Fresh Red Chili
1-Cup Brown Sugar
2-Oranges Segmented and Juice-Put Segments to Side for Glaze
½ Cup Orange Juice
Salt & Pepper

Mix all ingredients and rub over Pork Loin, Bake at 400 Degrees for 30 minutes, turn oven off, let loin sit in oven additional 10 minutes, then remove and slice

Orange Serrano Chili Onion Glaze

1-Red Onion Sliced
2-Gloves Garlic, Chopped
1-Tablespoon Olive Oil
1-Tablespoon Dijon Mustard
2-Oranges Segments
½ Serrano Chilled Diced
Salt & Pepper

Sauté’ Onions until caramelized, add Garlic, Serrano chili, orange segments, juice and mustard, reduce to half amount, after slicing pork, dress with glaze
