The Guerilla Gourmet

1        lb       Roasted mixed Zucchini and Squash
2        T       Pine Nuts Roasted, salted
to      taste Ricotta or Goat Cheese
10      ea      Mint Leaves, Chiffonade
1        ea      lemon
olive oil
Salt

Mix roasted Squash with lemon juice and olive oil to taste.  Garnish with crumbled cheese, pine nuts, mint and bread crumbs if desired

Stuffed Squash Blossoms

4        Ea     Squash blossoms cleaned
1        cup    Goat Cheese
2        T       Buttermilk or goat milk
4        ea      basil leaves
2        ea      mint leaves
1        ea      lemon, zested and juiced
2        cup    tomato sauce
bread crumbs optional

Clean and Stuff Goat cheese mixed with herbs and lemon zest.  Pipe into squash blossoms.  Heat tomato sauce and lay stuffed squash blossoms on top.  Fire into a 400 degree oven for 8-12 minutes.  Garnish with bread crumbs if desired.
