From '300 Best Taco Recipes:' Buffalo Chicken Tacos

PHOENIX -- Here is a taco for those who love spicy chicken wings. A little hot sauce spices up the roasted chicken. Wrap in a warm corn tortilla and top with aged blue cheese.


1 1/2 Tbsp. (22mL) olive oil 22 mL
3 cups shredded roasted chicken
1/4 cup Louisiana hot sauce
8 6-inch (15 cm) corn tortillas
2 cups chopped romaine lettuce
8 oz. blue cheese, crumbled

In a large skillet, heat oil over medium heat. Sauté chicken and hot sauce until chicken is heated through, 10 to 12 minutes.

To build tacos, divide chicken mixture equally among tortillas. Top with lettuce and blue cheese. Fold tortillas in half.

Tips: When I am pressed for time, I pick up a roasted chicken from the deli section of my grocery store. Typically, one 4-pound roasted cooked chicken will yield approximately 4 cups (1 L) of cooked diced chicken.

There are several types of sauces spiked with Cayenne pepper on the market. Some are called “wing” sauce. Louisiana hot sauce is one of the originals and has a good medium flavor.
