Marinated Artichoke Salad from The Complete Idiot’s Guide to The Mediterranean Diet

The flavors of an antipasto platter are combined here for a quick and delicious salad.
Yield: 3 cups
Prep Time: 15 minutes
Serving Size: 1/2 cup
Each serving has:
90 calories 5 g total fat 1.5 g saturated fat
3 g protein 9 g carbohydrates 3 g fiber
5 mg cholesterol 600 mg sodium
1/3 cup canned artichoke hearts in water, drained
1/4 cup kalamata olives, chopped
1/3 cup jarred roasted red peppers, chopped
1/4 cup feta, crumbled
2 TB. red onion, finely chopped
1 TB. extra virgin olive oil
1 TB. balsamic vinegar
1 clove garlic, finely minced
1 TB. fresh parsley, finely chopped
1/8 tsp. freshly ground black pepper
1/8 tsp. kosher salt
Combine artichoke hearts, kalamata olives, red peppers, feta, onion, olive oil, vinegar, garlic, parsley, salt and pepper in a mixing bowl. Mix well.
Cover and refrigerate for 30 minutes or longer to allow flavors to meld.
Variation: Add 2 oz. each of sliced cheese and salami and serve on a bed of mixed greens.
