Pepita Bison Burger

Recipe makes 4 ea 8oz hamburger (other meats can be substituted such as Beef or Lamb).  
For the burger:
2# Ground Bison
1 1/2 T  Bryans BBQ rub (or salt and pepper to taste)
2 oz  Toasted Pepitas
For the topping:
2 ea  fire roasted poblano peppers julienne
2 ea  large shiitake mushrooms julienne
1 ea medium red onion julienne
as needed olive oil
salt and pepper to taste
Grill poblanos until skin turns black and place in plastic bag for about 10 min.
Remove skin and seeds and jullienne
In a large saute pan add a little oil and saute onions and mushrooms then add julinne pobanos
season with salt and pepper and keep warm
Mix ground Bison, seasoning and pepitas in bowl and form into patties
grill to desired temperature
Top burgers with warm poblano, onion, mushroom mixture mixture and serve
