Balsamic Vinaigrette, Grilled Veggie Salad

Balsamic Vinaigrette
1 c balsamic vinegar
½ c extra virgin olive oil
1/8 c chopped basil
1 T Dijon
¼ tsp crushed red pepper
½ tsp pepper

Chop spinach, kale, chard and spring mix and toss in vinaigrette.  Top with tomatoes and carrots and grilled veggies and pineapple.   
 

Grilled Veggie Salad
Fresh pineapple, cut into planks
zucchini
asparagus
chard, chopped
spinach, chopped
kale, chopped
spring mix, chopped
carrots, shredded
tomatoes, chopped

Marinade zucchini and asparagus in balsamic vinaigrette up to 24 hours.  Marinade pineapple in balsamic vinaigrette about 10 minutes.  Grill zucchini, asparagus, and pineapple for about 3-5 minutes.
