Bolognese

Ingredients:
drizzle Olive oil
½ cup Yellow onion, minced
½ cup Carrot, minced
½ cup Celery, minced
1 Tbsp Fresh garlic minced
¼ lb. Fresh ground veal
¼ lb. Fresh ground pork
½ cup Pancetta or proscuitto, diced small (if available)
¼ lb. Ground Beef
pinch Ground nutmeg
pinch Ground clove
pinch Chili flakes
pinch Fennel Seeds
14 oz. can Canned Tomato blended
¼ cup Whole Milk
1 cup Red Wine
Thyme (Sachet), cheesecloth bag
Rosemary (sachet), cheesecloth bag
Parsley stems (sachet), cheesecloth bag
1 Bay leaf
8 oz Chicken, beef, or vegetable stock

Procedure:
In saucepot add olive oil, render pancetta or proscuitto. When crispy add pork, beef, veal.  Brown meat then add minced vegetables. Sweat vegetables until translucent add red wine, reduce dry.  Add sachet, blended tomato, spices, milk, and stock.  Simmer for 45min-1hour ,stirring occasionally.  When cooked remove sachet and cool.
