Lemon Artichoke Chicken

PHOENIX -- Taste of Glendale is coming up this weekend and former Cardinals player Michale Bankston is one of the celebrity chefs.

He joined Tara Hitchcock in studio on Monday to show off one of his favorite dishes -- Lemon Artichoke Chicken With Asparagus.

2 chicken breast, about 4 oz. each
2 oz. butter
2 oz. white wine
1 lemon
3 artichokes, cut in half
Salt and pepper to taste
1/4 cup olive oil
2 oz. red wine
2 Tbsp. garlic salt

Cook the chicken on the grill for about 5 to 8 minutes on each side, depending on the thickness of the chicken breast. 

Put the butter into a pan along with the white wine, and squeeze half of the lemon. Reduce for about 2 minutes.

While chicken is grilling, sauté the asparagus in red wine and olive oil in a covered pan for about 5 minutes.

Place the chicken breast and artichokes halves into the sauce. Plate and serve.

This dish will take about a total time of about 20 minutes including prep time.  This is also a healthful dish. It's great for when you’re trying to shed a few pounds.
