The International Sportsmen’s Exposition
The International Sportsmen's Exposition will be held at the Thursday Feb 24 thru Sunday Feb 27th at the University of Phoenix Stadium, in Glendale. Potato and Root Vegetable Hash with Pulled Beef and Fried Eggs
Beer Pairing:  Gulden Draak
Serves 4

1 Russet Potato Diced
1 Sweet Potato Diced
1 Cup Butternut Squash, Diced
1 Parsnip, peeled and Diced
1/2 Cup Red Onion, Diced
1 Jalapeno, Diced
1 Tbsp Lemon Zest
1 Tbsp Garlic, Chopped
2 Tbsp Olive Oil
1/2 Cup Parsley, Chopped
2 Tbsp Fresh Oregano, Chopped
Salt and Pepper
1/2 Lb Smoked Beef, shredded
8 eggs
Hot Sauce

Take a large sauté pan and heat oil over medium heat.  Add potatoes, squash, parsnip and sauté for a few minutes.  Add onion, garlic and jalapeno, continuing to cook until all vegetables are cooked and golden brown (about 15 minutes).  Add shredded beef, parsley, lemon zest, oregano and season with salt and pepper.  Plate the hash, top with your favorite style of eggs (sunny side up go great!) and pour on some of your favorite hot sauce and enjoy.
