Grilled Cheese - 3 Ways

Each recipe make one sandwich.


BT's Almost Famous Grilled Cheese Sandwich

1 round focaccia-style bread
2 slices Manchego cheese
2 slices white cheddar
2 slices Fontina cheese
1 Tbsp. butter

Slice bread horizontally, place two slices of each kind of cheese between two pieces of bread. Close and butter each side of bread.  Cook slowly in sauté pan covered until cheese is thoroughly melted inside.  Cut into quarters and enjoy!

French Apple & Brie Grilled

2 slices french loaf (sliced on a bias about 1/2 inch thick)
2 Tbsp. fig jam  (store bought or homemade)
4 slices fuji apple
2 slices (the size of the bread) brie
1 Tbsp. butter

Spread the fig jam on the bread.  On the opposite side of the bread smear the butter. Place in pan butter side down and top with the brie.  Remove form pan and top with the apples.  Season with sea salt.  Serve open faced.

Bacon and Tomato Grilled Cheese

2 slices sourdough bread
1 small handful arugula
2 slices Fontina
2 pieces cooked bacon
1/2 vine ripe tomato (sliced thick)
1 Tbsp. mayo

Butter bread.  Place in pan and top with the fontina.  Once melted remove from heat and ad the arugula and tomatoes.  Brush on the mayo and ad the bacon.  Close and cut the sandwich.
