Grilled pork chops with sweet potato garlic sausage stuffing, and black bean salad

4 ea. 8 ounce center cut rib pork chops (cut a pocket--demo)
1 large cooked sweet potato
2 pork sausage cooked and minced
Juice of three oranges
Juice of three limes
1 Tbsp. fresh chopped oregano
1 tsp. garlic puree
Pinch of salt and pepper
1/4 cup olive oil
3 cups cooked black beans
2 avocado medium dice
2 large tomato medium dice
1 large white sweet onion medium dice 
In a large sauté pan with a little oil sweat onions with sausage till caramelized, then add sweet potato
Add 3/4 of garlic, lime juice, orange juice, oregano with salt and pepper
Mix well then put inside a pastry bag
Stuff pork chops  (demo)
Grill pork chops with a touch of oil four minutes on each side then place in a 400F degree oven for 8 to 10 minutes 
In a bowl place black beans, avocado, tomatoes and onions with a little orange and lime juice
Mix well then add salt and pepper to taste 
For the glaze mix a little lime and orange juice along with oregano and some garlic puree 
Glaze pork chops with your mixture and serve black bean salad at room temperature
