Braised greens & diver sea scallops

1-whole yellow onion-chopped
½ lb bacon
2-cloves chopped garlic
2-Tbsp. olive oil

Cook bacon & onion together for 10 minutes,
Add 1lb. braising mix & 1 cup chicken stock-braise for 15 minutes
Add juice from one lemon
Salt & pepper to taste

Pan sear 12 diver scallops in olive oil for 4 minutes per side.

Ruby Red Vinaigrette
2-ruby red grapefruits-segments only
1-tsp. chipotle
1 Tbsp. brown sugar
1 Tbsp. chopped cilantro
1 Tbsp. vanilla bean oil
½ cup olive oil
Whisk together
Salt & pepper to taste

Placed braised greens in middle of plate, surrounded by scallops
Drizzle vinaigrette's on top
