Puerco asado

Serves Six 
2 ea. 10 to 12 ounce pork tenderloins, all fat removed 
1/4 cup sliced olives of choice
1/2 tsp. capers
1/4 cup small diced sweet onion
1/4 tsp. garlic puree
1/4 tsp. oregano
1 tsp. sherry vinegar
2 Tbsp. olive oil
Pinch of sugar
1 fresh lemon
Salt and pepper to taste 
Mix all ingredients into a paste and spread on plastic sheet
Slice pork tenderloin into 1 inch pieces and place on plastic sheet
Put another plastic sheet on top of meat
With a meat pounder gently pound meat till thin or scaloppini style
Place on a hot grill and sear on each side for 2 to three minutes
Finish with a squeeze of fresh lemon juice
