Potato Latkes

Chef Aaron May from Over Easy demonstrates how to make potato latkes.


4 or 5 large potatoes, grated
1 medium onion, grated
1 or 2 large eggs, beaten well
1/2 tsp. salt
Pepper to taste
Oil for frying
Potato starch, as needed


Grate potatoes and onions and mix well together. Pour the mixture through a strainer to drain off all excess liquid.

Combine mixture with egg and seasoning. If the mixture is loose, add potato starch as need.

Fry the latkes over a slow heat about 5 minutes on each side, or until golden brown.

Serve with applesauce and/or sour cream.

Serves 6-8
