Harvest turkey salad with stuffing croutons

1 lb. turkey
1 cup sugar snap peas
1 sun dried cranberries
2 cups of stuffing  croutons
½ cup celery
½ cup pecans
8 oz. salad greens
1 cup onion frizzles
Salt and pepper to taste.

Dressing
1 cup olive oil
½ cup orange juice concentrate
½ cup cranberry sauce
1 tsp. chipotle
2 Tbsp. cilantro
Salt and pepper to taste

Procedure
1. Combine all of the above in a blender and pulse until smooth.

Croutons
1. Place your stuffing on a sheet pan and spread it out so the thickness is about 1inch thick.
2. Bake at 400 degrees until stuffing is brown  and crisp. Let cool for 10 minutes and cut into croutons.
