Grilled goat cheese toasts

¼ cup   balsamic vinegar
¼ cup   butter
20 ea.  baguette slices
8 oz      goat cheese
1 recipe  apple compote (recipe follows)

1. In a small saucepan, reduce the balsamic vinegar over high heat until it thickens and will coat the back of a spoon (you will have about 1 Tbsp left); remove from the stove and allow to cool to room temperature.

2. Heat an electric griddle to 400 degrees. Butter the baguette slices and griddle both sides until golden brown. Spread one side of each toast with about a tablespoon of goat cheese and top with a tablespoon or so of the apple compote. Finish with a drizzle of the balsamic syrup.

Yield: About 20 toasts     

Apple Compote

2 Tbsp. butter
½ ea.  white onion, minced
4 ea.   green apples, peeled and diced brunoise 
½ cup sugar
1 Tbsp. apple cider vinegar
Pinch   cayenne pepper
2 Tbsp. chives, sliced

1. Heat a large sauté pan over high heat and melt the butter. Add the onion and apples and sauté until tender. Add sugar and reduce liquid out; about 10 minutes.

2. When the apples are “dry”, add the vinegar and cook down. Cool, and stir in the chives.
