Bike For It is a non-profit organization that is helping raise money for the Susan G. Komen Race for The Cure, The Harrington Cancer Center in Amarillo, TX, and LiveSTRONG, Lance Armstrong's Foundation. Michelle was inspired by her mom's triumph over breast cancer. She and her team of riders will ride to New Mexico where Michelle's brother, Rob, also a cyclist, will join them. The team will then continue to Amarillo, TX to complete the more than 800-mile ride scheduled for April of 2011… just in time to honor her mother for Mother's Day. The team's goal is to raise $100,000 to help continue the work and education of cancer fighting organizations. "Team Bike for It" is currently sponsored by Metropolitan Imageworks, Abuelos Mexican Restaurant, Camelback Coaching, Sunday Cycles and Industrial Pest Management and currently looking for additional sponsors and riders to help raise the awareness of the fight against breast cancer.

Recipe and Procedure for Pumpkin Pecan Crunch Brittle
 
IngredientQty.Butter, unsalted, room temperature4 ozSugar1 cupKosher salt1/4 tLaura's Gourmet Granola, Pumpkin Pecan Crunch1/2 cupLaura's Gourmet Granola, Pumpkin Pecan Crunch1/4 cup
 
1.         Melt butter and sugar in a saucepan over medium heat until it turns a deep caramel color.
2.         Remove from heat and fold in 1/2 cup Pumpkin Pecan Crunch granola
3.         Spread combination in an even, thin layer on a Silpat lined sheet tray. 
4.         Immediately sprinkle 1/4 cup Pumpkin Pecan Crunch granola over the layer.
5.         Allow to cool until hardened. Break into pieces
