Americana burger

2 lbs. fresh ground chuck
1 avocado
1/4 cup shredded mozzarella
1/4 cup marinara sauce
1 Tbsp. mustard, ketchup and mayonnaise
1/2 cup caramelized shallots
1/8 tsp. garlic puree
1/8 tsp. chopped cilantro
4 brioche buns brushed with olive oil, herb de provence and grilled
1 heirloom tomato
8 slices cooked bacon brushed with vanilla butter
1 vanilla bean in 1/2 cup melted butter
1/8 tsp. red wine vinegar 
Combine ground chuck, mozzarella, marinara, garlic puree cilantro, avocado and salt and pepper and make four 8 ounce patties
Cook patties on non stick pan with a touch of olive oil 3 minutes on each side
Place vanilla with butter and cook 5 minutes l medium heat, reserve
Combine ketchup, mayonnaise, vinegar and mustard. Reserve
Cook bacon and brush with vanilla butter when bacon is fully cooked
Cut tomato thick and finish with salt and pepper
Combine herbs de provence with olive oil and grill burger buns 45 seconds
Caramelize sliced shallots in a touch of olive oil for 5 minutes on low heat
Place burger on grilled bun with caramelized shallots, thick slice of tomato, ketchup, mayo mustard sauce
Serve with ice cold kosher pickles
