Blueberry Soup
4 cup fresh blueberries
15 oz can medjuol dates with syrup
4 Tbsp. lemon juice
2 Tbsp. fresh mint, chopped
1 cup water

Put all ingredients in a blender and blend until combined.

Cashew Kream
2 cup cashews
1-1/2 cup water

Puree in blender until smooth.  Should be thinner than peanut butter.

Serve blueberry soup in a bowl and top with a spoonful of cashew kream.

Cold Cucumber Soup

5 cucumbers peeled, cored and chopped small
½ cup chopped parsley
2 oz. yellow onion
2 Tbsp. minced garlic
2 Tbsp. fresh dill
¼ c lemon juice
1 qt veggie stock
16 oz. yogurt
½ tsp. salt
½ tsp. pepper

Place all ingredients in a large container. Using the hand blender, puree the ingredients until they are consistent.
