Stuffed Zucchini Flowers
 
FILLING
 
1 Cup Ricotta Cheese
1/4 Cup Chevre (opt)
1/4 tsp Fresh Ground Nutmeg
1/4 tsp Fresh Orange Zest
1 tbsp Fresh Parsley (finely minced)
1 tbsp Fresh Basil (finely minced)
salt and pepper to taste
(combine all in a bowl)
 
BREADING
 
1 Cup Bread Crumbs
1/2 Cup hazelnuts (opt)
(combine)
 
2 Eggs
1/4 Cup Milk
(combine)
 
Whisk together the eggs and milk
 
Season with a pinch of salt and pepper

PESTO GARNISH FOR DIPPING
 
1/2 Cup Fresh Basil Leaves tightly packed
6 tbsp Evo
2 tbsp Parmiggiana - reggiano
pinch of salt
**** Instructions
1. Prepare Zucchini blossoms with care to not tear. Usually there is no need to wash them but they must be examined for little bugs. Open them and spoon a teaspoon or so in the middle and twist the ends. Complete them all and put on a sheet
2. Dip each one lightly in egg wash and dredge in crumb mixture.
3. Put enough oil in a pan to coat sufficiently and keep from sticking
4. When oil is hot begin to submerge them carefully and fry until golden - gently turn them (do not crowd them) - take them out and drain on a rack with paper towels.
Pesto oil can be made 30 minutes in advance - put chopped basil leaves in small food processor, drizzle olive oil in with motor running add parmesan and a pinch of kosher salt - use as a plate garnish dip for the zucchini blossoms.
