Fig and queso anejo salad

4 figs
1 12 oz pack anejo cheese cut into 1/2 inch cubes
1/4 cup sliced red onion
1/4 cup[ dried super sweet corn
2 radish sliced
1 cup shredded romaine lettuce
1/3 cup  citrus lime dressing

Heat oil about 1 inch deep in a skillet
Fry the cheese for about 45 seconds and remove and drain on paper towels.
In a large bowl toss everything together and mound on 4 plates.

Citrus Lime Dressing
1 cup olive oil
1/4 cup lime juice
1/2 orange juiced
1 tsp salt
1/2 tsp pepper
2 tbsp honey
2 tsp oregano
