Teriyaki rice bowl

½ c Ginger Rice
small handful of whole cashews
¼ c chopped broccoli
shredded carrots
sugar snap peas
2-3 pieces of pickled ginger
nori strips

Mix rice with broccoli, carrots and sugar snap peas.  Top with cashews, pickled ginger and nori strips.  Sprinkle with Teriyaki Dressing.  Serve hot. 

Ginger Rice
1 c wild rice
1 c coconut milk
1-1/4 c water
2/3 Tbsp. ginger
¼ tsp. black pepper
2-2/3 oz Braggs Aminos

Combine all of the ingredients in the rice cooker and cook until done.

Teriyaki Dressing
• ¼ c Braggs sauce
• 3 Tbsp. honey or agave nectar
• ½ lime, juiced
• 3 Tbsp. olive oil
• 2 rice wine vinegar
• 1 clove garlic, finely chopped
• 1 tsp. shredded ginger
• Two dashes of red pepper flakes

Combine all ingredients, except oil in blender.  While blender is running on high, slowly drizzle oil until combined.
