This popular restaurant located at Via Linda and Mountain View in Scottsdale Ranch features authentic Italian dining with a Sicilian flair! The Tucsan décor is very warm and inviting and the menu features all the classics, including fresh produce, wild fish, natural veal, hand-tossed pizzas and homemade bread, pasta and desserts! 4 veal scaloppini (4 oz. ea)
1/4 cup all purpose flour
1/4 cup homemade bread crumbs
1/4 cup grated Romano cheese
1 tbs- chopped parsley
6 tbs.- extra virgin olive oil
4 pieces of 1/4" cut sliced fresh mozzarella
2 garlic gloves
1 white onion
1 jar of 28 oz. San Marzano tomatoes
10 leaves of fresh basil
Salt and pepper to taste
1} Beat egg in a bowl
2] Combine bread crumbs with grated Romano cheese and chopped parsley
3} Dip veal in flour, then the egg, then dip the veal into the bread crumbs.
Make sure both sides of the veal have bread crumbs mixture.
4} Heat oil in a frying pan and cook for two minutes on each side. Remove and place into a baking dish.
5} In a sauce pan add the extra virgin olive oil, onions, garlic, crushed tomato, and salt and pepper to taste.
Cook for 3- 4 minutes.
6} Preheat oven to 350 degrees.
7) Place veal on a baking dish, add tomato, fresh mozzarella on top of each veal. Bake for about 10 minutes garnish with fresh basil.
