NATIONAL MUSTARD DAY - COOKING WITH MUSTARD
Recipe and Procedure for Grilled Salmon with Stone ground Mustard Honey Glaze
IngredientQty.Salmon, skin on1 1/2 #Olive oilas neededWaterif needed Stone ground mustard2 THoney2 TBrown Sugar1/2 TGarlic, minced1 large cloveScallions, chopped1/4 cupServes 4
1. In small saucepan, sauté garlic in a little oil until fragrant, about one minute, then add mustard, brown sugar and honey. Whisk to combine. If too thick, add a little water to thin slightly. Adjust seasonings to taste.
2. Place salmon on parchment lined sheet ray. Rub lightly with a little olive oil and dust with sea salt. Roast in 450 degree oven until medium rare. Remove. Pour glaze over salmon, garnish with scallions and serve immediately.
Recipe and Procedure for Asian Salad with Wasabi Mustard Vinaigrette
Yield 4-6 servings
IngredientQty.Rice wine vinegar4 TWasabi « mustard »1 TMaggi SeasoningA few dropsSesame oil1 tVegetable or Canola Oil6 TBaby Spinach2 cupsBroccoli slaw (bagged in produce section)2 cupsWater chestnuts, chopped1/2 cupRed Bell Pepper, Medium Dice1/2 cupGreen Onions, Chopped3 eaAlmonds, toasted, chopped, sliced or slivered1/4 cup
1. Combine vinegar and wasabi "mustard" and stir until wasabi dissolves. Add magi seasoning and sesame oil and whisk until smooth. Add canola or vegetable oil until emulsified. Adjust flavors - add more wasabi for a hotter sauce, more vinegar for a more acidic sauce.
2. Toss the baby spinach, broccoli slaw, water chestnuts, bell pepper and green onions with enough dressing to lightly coat. Plate salads and garnish with almonds.
