Pomegranate Chili BBQ Chicken

Pomegranate Chili BBQ Chicken
2 Whole Boneless Chicken Breasts
1 Tablespoon Olive Oil
2 Cloves Garlic (Chopped)
Salt and Pepper to Taste

Toss chicken in above ingredients
Place chicken in pan with oil and brown on both sides until chicken is 90% cooked through
Add 4oz. BBQ sauce (see below) to pan and cover for 4-5 minutes on low heat
Remove chicken and serve

BBQ Sauce
2 Cloves Garlic (chopped)
½ Cup Red Onion (chopped)
2 Teaspoons Olive Oil
2 Teaspoons Crushed Red Pepper
8oz. Pomegranate Juice
12oz. Cattleman’s BBQ Sauce (or sauce of your choice)
Salt and Pepper to Taste

Heat oil in sauce pan
Add garlic, onions and crushed red pepper and sauté for 5 minutes or until soft
Add juice and BBQ sauce, simmer for 30 minutes
Finish with salt and pepper, serve

Cucumber Relish
1 Cucumber (Julienne)
2 Tbls.  Ground Pistachio
1 lime juiced
1 red pepper  (julienne)
1 Tsp. vanilla  oil
1 tsp. chopped mint
Salt and pepper to taste

Combine all of the above in a bowl and mix well.
