XXX Hawaiian Ahi Poke Poke

Ingredients:
1 piece #1 grade Ahi Sashimi grade 16 ounces
1 Large sweet white peach
1 avocado medium dice
1/2 sweet onion cut small dice
6 sunburst cherry tomatoes cut in half
1 tablespoon chopped cilantro
1/4 tablespoon ground cilantro
Juice of 1 lemon and 1 lime
1/8 teaspoon curry ground
1/8 teaspoon sesame oil
Pinch of salt and pepper 
 
Instructions:
Place ahi in freezer for 7 minutes
Dice ahi into 1/2 inch cubes and place in a cold stainless steel bowl
Add onions, tomatoes, peaches avocado, cilantro, coriander, curry sesame oil, lemon and lime juice and then salt and pepper to taste
Mix gently and place in a round mold pressing lightly to form a gateaux 
 
Sweet Soy Wasabi Aioli 
In a blender place an egg yolk, juice of 1 lemon, 1/4 teaspoon wasabi powder and 1/4 teaspoon soy with 1/2 teaspoon sugar.  Blend while adding 1/2 cup olive oil slowly
 
Place aioli on top of poke gateaux
