Wild West Pork Burrito with Deconstructed Guacamole

4 pieces  8 inch tortilla of choice
1 Pork Tenderloin
1/2 Teaspoon Cumin
1/2 Teaspoon Oregano
1/4 Teaspoon granulated garlic
Juice of 1 lemon and lime
1 tablespoon chopped cilantro
1 teaspoon garlic puree
1 onion cut julienne
1 bell pepper cut julienne
1/4 cup crumbled goat cheese
2 lemon and lime wedges
2 avocado cut 1/4s
1 piece 12 inch skewer
4 Slices thin sliced provolone
8 Perfect basil leafs (no stems)
Rub pork tenderloin with salt, pepper, cumin, oregano and granulated garlic
Place in a 450 degree oven for 8 minutes
Let rest for five minutes at room temperature
In a hot sauté pan cook, onions and peppers in olive oil till caramelized
Add garlic puree and cook garlic out (2 minutes)
Place in a bowl and let cool for 5 minutes
Add cilantro, cheese, lemon and lime juice along with salt and pepper to taste
Slice pork tenderloin paper thin and add to bowl
Place mixture into tortilla and roll
Place burritos on a sprayed sheet pan and bake at 450 degrees for 8 minutes
Place basil leafs on provolone slices and put over burritos
Place back in oven 45 seconds to create cameo
Skewer burritos four high and place lemon, lime and avocado on top of skewer
