Blackberry Mascarpone Mille-Fuille

Mascarpone Mousse
16 ounces Mascarpone
1 ea. Lemon, juiced
½ teaspoon Sugar
1 ½ Vanilla bean

1. In a mixing bowl, combine mascarpone cheese, juice of on lemon 1 ½ teaspoons of vanilla bean and ½ cup granulated sugar.  
2. Mix well and pass through sieve if a little lumpy. 
3. Depending on consistency of mascarpone cheese, a little bit of heavy whipping cream (2 Tablespoons – up to ¼ cup) may be added to lighten up the mousse. 
4. Mixture should be the consistency of a light cream cheese.

Fillo Layers
1 pound box Fillo dough 
1 cup Butter, clarified 
½ cup Sugar

1. Unwrap thawed fillo layers from package and cover with damp towel. 
2. Warm clarified butter to a liquid and place next to fillo along with a clean pastry brush. 
3. Prepare a clean cutting board large enough to accommodate whole sheets of fillo. 
4. On your board, place one sheet of fillo, brush lightly with clarified butter (do not saturate), and sprinkle with granulated sugar (1 tablespoon). 
5. Place next layer of fillo on top of the other and repeat the process two more times. 
6. There should be a total of three layers altogether, finish top layer with butter and sugar. 
7. Next cut the fillo into twelve pieces, two horizontal cuts and three vertical cuts making small rectangles. 
8. Cut the rectangles into pyramid shapes from corner to corner on all twelve pieces. 
9. Place pieces (24 in total) on a large baking sheet with parchment over and under the fillo, cover with another baking sheet to sandwich the dough together
10. Bake in a 350 degree oven for 8 minutes until golden brown.  This will yield 8 portions of fillo dough, three stacks per plate. 

Blackberry Sauce
2 pints Blackberries 
½ Lemon, juiced 
2 Tablespoons Sugar 

1. Pour 2 pints of blackberries into a blender along with the juice of ½ of a lemon and 2 tablespoons of sugar. 
2. Adjust the amount of sugar depending on the sweetness of the blackberries. 
3. Blend until liquid and pour through a sieve to extract the seeds. 
4. Place in a small container or squeeze bottle.

Blackberry Garnish
2 pints Blackberries 
2 Tablespoons Sugar 
1 Tablespoon Butter 

1. On a baking tray place 2 pints of blackberries. 
2. Place the 2 tablespoons of butter over the berries along with the 2 tablespoons of sugar. 
3. Flash in a hot oven (425 degrees) for 5 minutes until the berries give off some juice. 
4. Cool and reserve.
