1 pack Savoiardi (or Lady Fingers)
1 lb Mascarpone Cheese
1 qt Coffee
4 Egg yolks
1/2 cup Rum
½ cup Amaretto
3 tbspCocoa Powder
Prepare the Mascarpone cream by melting the sugar in a sauce pan, and then adding it to the yolks in a bowl by whisking vigorously with a hard whisk
Add the mascarpone cheese and the amaretto and mix until a smooth silky cream is formed.
Dip the lady fingers in a coffee Rum mixture and display them in a deep container one next to each other. Cover with the mascarpone cream and repeat this step twice
Until the container has two layers of lady fingers and mascarpone cream. Dust with cocoa powder and chill in the fridge for 3-4 hours.
