Cherry Breakfast Parfait with Orange & Mint

3/4 cup Plain non-fat yogurt
1 tsp Orange zest
2 tsp Honey
1 tsp Fresh mint, coarsely chopped
1 cup Cherries, pitted
1 cup ZuZu’s granola (substitute good quality commercial granola) *see below
2 each Mint sprig

1. In a small mixing bowl, whisk together yogurt, orange zest, honey and mint. Spoon 2 Tbsp of the yogurt in the bottom of two parfait glasses. Divide half of the cherries between the two glasses, placing the cherries on top of the yogurt.

2. Divide the granola between the two glasses, spooning it on top of the cherries. Top the granola with a little more yogurt.

3. Divide the remaining cherries (save 2 for garnish) between the two glasses followed by the remaining yogurt. Top the yogurt with the reserved cherries and the mint sprig.

ZuZu’s Granola
1-1/4 lbAll purpose flour
2 lb Rolled oats
½ lb Wheat germ
1 lb Brown sugar
1 cup Salad oil
5 oz Honey
2 oz Sunflower seeds
3 oz Slivered almonds
6 oz Cashews
6 oz Walnuts
6 oz Pistachios
3 oz Pecans

1. In a large mixing bowl, combine flour, oats, wheat germ and brown sugar; mix well. Alternate drizzling in the oil and honey little by little, mixing in-between until all the oil and honey is incorporated. In a separate bowl, combine the seeds and nuts and mix well. Add the nut mixture to the flour mixture and fold together until barely combined.

2. Pre-heat oven to 250 degrees. Spray four 12” x 18” baking sheets with Pam or any other food release spray. Divide the granola between the pans and spread out evenly. Bake for 30 minutes; turn over in large pieces with an oversized spatula (so the underside can cook); return to oven. Increase oven temperature to 300 degrees and bake an additional 15 minutes until golden brown. Cool before serving
